Cheesy Potatoes
6 medium russet potatoes, skinned, boiled, and cooled and grated. (boil potatoes in skin, let cool, peel skin off, grate potatoes).
1/2 cube butter
1/2 (1cup) pint sour cream
1 can cream of chicken soup
1/3 cup chopped onion (sautéed in butter)
1 cup shredded cheddar cheese
Mix all ingredients, reserving 1/4 cup shredded cheese to top the mixture.
Place in a 8x8 inch baking dish.
Bake 350 for 20-25 minutes, or until warm.
